Ingredients
- Biscuits:
- 1 cup almond flour
- 6 tablespoons coconut flour
- ⅓ cup unflavored whey protein powder
- ¼ cup erythritol sweetener (granular)
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ⅔ cup sour cream
- 3 large eggs
- ½ teaspoon vanilla extract
- ¾ cup fresh blueberries
- 2 tablespoons butter (divided)
- Optional Glaze:
- ⅓ cup powdered sweetener
- 1 tablespoon lemon juice

Instructions
Preheat and Prepare
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper or grease lightly.
Mix Dry Ingredients
In a large mixing bowl, combine the almond flour, coconut flour, whey protein powder, erythritol, baking powder, and salt. Whisk to blend evenly.
Prepare Wet Ingredients
In a separate bowl, whisk together the sour cream, eggs, and vanilla extract until smooth.
Combine and Fold
Gradually add the wet ingredients to the dry ingredients. Mix until a thick dough forms.
Gently fold in the fresh blueberries, ensuring they are evenly distributed.
Form Biscuits
Use a spoon or your hands to form the dough into 8-10 biscuits and place them on the prepared baking sheet. Flatten slightly for even baking.
Add Butter and Bake
Melt 1 tablespoon of butter and brush it over the tops of the biscuits. Reserve the other tablespoon for later.
Bake for 18-22 minutes, or until the biscuits are golden and a toothpick inserted into the center comes out clean.
Optional Glaze
While the biscuits are cooling, whisk together the powdered sweetener and lemon juice in a small bowl. Adjust the consistency with a few drops of water if needed.
Drizzle the glaze over the cooled biscuits.
Melt the remaining 1 tablespoon of butter and lightly brush it over the biscuits for a buttery finish.
