Ingredients
-
1 lb ground turkey
-
2 tbsp olive oil
-
1 medium onion, diced
-
3 cloves garlic, minced
-
3 cloves garlic, minced
-
3 celery stalks, sliced
-
4 cups green cabbage, shredded
-
6 cups low-sodium chicken broth
-
1 tsp dried thyme
-
1 tsp dried oregano
-
1 tsp dried parsley
-
1/2 tsp black pepper (or to taste)
-
1/2 tsp salt (or to taste)
-
Optional garnish: fresh parsley or a squeeze of lemon
Directions
Sauté Aromatics
Heat olive oil in a large pot over medium heat. Add the diced onion and garlic, cooking until softened and fragrant (about 3–4 minutes).
Cook the Ground Turkey
Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned and fully cooked (5–7 minutes).
Add Vegetables
Stir in the carrots, celery, and cabbage. Cook for 3–4 minutes to begin softening the vegetables.
Build the Broth
Pour in the chicken broth. Add thyme, oregano, parsley, salt, and pepper. Stir to combine.
Simmer
Bring the soup to a gentle boil, then reduce the heat to low. Cover and simmer for 20–25 minutes, or until the vegetables are tender and the flavors are well combined.
Taste and Adjust
Taste the soup and adjust the seasoning if necessary.
Serve
Ladle the soup into bowls and garnish with fresh parsley or a squeeze of lemon for brightness.
Recipe Note
This soup can be customized with additional vegetables like spinach or zucchini.
For a heartier meal, consider adding a small portion of cauliflower rice.
