This Italian-inspired chicken recipe is packed with flavor and free of added sugars, making it perfect for those managing diabetes. Tender chicken breast is paired with a savory tomato-based sauce and classic Italian herbs for a wholesome, low-carb meal.
Ingredients
-
2 boneless, skinless chicken breasts
-
1 tbsp olive oil
-
2 cloves garlic, minced
-
1 cup canned diced tomatoes (no sugar added)
-
1/4 cup tomato paste (no sugar added)
-
1/4 cup chicken broth
-
1 tsp dried basil
-
1 tsp dried oregano
-
1/2 tsp crushed red pepper flakes (optional)
-
Salt and black pepper to taste
-
1/4 cup grated Parmesan cheese (optional)
-
Fresh parsley or basil leaves for garnish
Directions
Prepare the Chicken
Season both sides of the chicken breasts with salt and black pepper.
Sear the Chicken
Heat olive oil in a skillet over medium heat. Add the chicken breasts and sear for 4–5 minutes on each side, until golden brown. Remove from the skillet and set aside.
Make the Sauce
In the same skillet, add the minced garlic and sauté until fragrant (about 1 minute). Stir in the diced tomatoes, tomato paste, and chicken broth. Add the dried basil, oregano, and crushed red pepper flakes (if using). Stir well to combine.
Simmer the Chicken
Return the chicken breasts to the skillet, nestling them into the sauce. Reduce the heat to low, cover, and simmer for 15–20 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C).
Finish and Serve
Optional: Sprinkle Parmesan cheese over the chicken and let it melt for an extra layer of flavor. Garnish with fresh parsley or basil.
Serve
Serve hot with a side of zucchini noodles, roasted vegetables, or a green salad for a low-carb, diabetic-friendly meal.
Recipe Note
Tip: This recipe is versatile! You can double the sauce and freeze leftovers for a quick meal base.
