1 small red bell pepper, diced
-
1 tbsp taco seasoning (low-sodium, if possible)

Directions
Instructions
Cook the Beef
Heat a non-stick skillet over medium heat. Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Drain any excess fat if needed.
Sauté the Vegetables
Add the diced onion and red bell pepper to the skillet with the beef. Cook for about 3-4 minutes, stirring occasionally, until the vegetables soften.
Season the Mixture:
Sprinkle in the taco seasoning and stir well to coat the beef and vegetables evenly. Cook for 1 minute to toast the spices.
Simmer with Tomatoes and Broth
Add the diced tomatoes and chicken broth to the skillet. Stir to combine. Let the mixture simmer for 5 minutes, allowing the flavors to combine.
Prepare the Cauliflower Rice
While the beef mixture is simmering, heat another non-stick skillet over medium heat. Add the cauliflower rice and cook for 3-4 minutes until tender. Season lightly with salt and pepper, if desired
Assemble the Bowls
Divide the cooked cauliflower rice between two bowls. Top each with the taco beef mixture.
Finish with Cheese:
- Sprinkle 2 tablespoons of shredded tasty cheese on each bowl. Let the heat of the beef melt the cheese slightly.
Recipe Note
If desired place the cheese directly onto the beef while in the pan, cover till the cheese melts and serve over the cauliflower rice.
